Recipes for Surfers: Tequila-Lime Shrimp Skewers

TEQUILA LIME SHRIMP SKEWERS

 

This is a recipe for one of our special plates at the Eat at Joe’s restaurant located here at Witch’s Rock Surf Camp in Tamarindo, Costa RIca.

This makes 8 delicious  servings-

Tequila-Lime Shrimp Skewers

Tequila, lime & Cointreau-marinated shrimp grilled on the barbie and covered in fresh mango salsa. Served with cilantro-rice, plantains & grilled tomato halves.

Ingredients:

4 tablespoons tequila
4 tablespoons triple sec
2 tablespoon fresh lime juice
4 teaspoons olive oil
2 teaspoon bottled hot sauce (such as Chilero)
3 garlic cloves, minced
48 large shrimp, peeled and deveined, with tails on
16 (6-inch) bamboo skewers, soaked in cold water for at least 10 minutes
16 lime wedges (garnish)

Instructions:

1. Prepare rice according to package directions. Prepare grill.
2. Combine all shrimp ingredients in a large bowl.
3. Add shrimp; toss well to coat, and let stand 10 minutes. Thread 3 shrimp
onto each skewer, reserving remaining marinade.
4. Coat grill with vegetable oil; place skewers on grill. Cover and cook on
medium-high heat 4 minutes.
5. Brush with remaining marinade. Turn skewers; brush again. Cover and grill
3-4 more minutes or till shrimp are opaque.
6. Meanwhile, transfer the rice to a medium bowl; stir in salt and 2 tablespoons
cilantro. Spoon 3/4 cup rice onto each of 4 serving plates; top each with 2
skewers and remaining cilantro. Serve with lime wedges.

Cilantro Rice:

3 cups uncooked rice
2 teaspoon salt
1/2 cup chopped fresh cilantro
1 lime squeezed

Directions: Cook rice in a rice cooker or pot. Then, in a large bowl mix cooked rice with fresh chopped cilantro. Add salt and lime to taste.

Mango Salsa:

4 cups chopped mangoes
8 tablespoons red onion
8 tablespoons chopped cilantro
8 tablespoons coconut cream
1 teaspoon salt

Directions: Mix all ingredients together in a bowl and set aside.

Grilled Tomato Halves:

8 tomato halves (4 tomatoes cut in half)
1/2 cup olive oil
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 1/2 teaspoons oregano

Directions: Cut 4 tomatoes in half. Be sure to remove core from top of tomato. Place halves in bowl with all ingredients and mix thoroughly. Grill halves to order.
